Of unclear origin. Apparently from the dialectal term burgood (“yeast”). * Perhaps ultimately from Welsh burym (“yeast”) + cawl (“cabbage, gruel”), * Or perhaps from Arabic بُرْغُل (burḡul). * Or, from an alteration of ragout.
